It was delicious !! I’m suspicious because I love Butterscoth pudding and all the variations;) I am unable to follow a recipe to the letter, so I add this or that … In this case, I decided to take advantage of the old recipe to upgrade it! Try it !!!
Here’s what I did … step by step! 🙂
- I melted 60 g butter (I used the traditional Vaqueiro). I added 200 g of yellow sugar and mixed until the sugar was sufficiently moist. I removed it from the fire.
2. In a bowl, I mixed 3 tablespoons of cornstarch with 60 ml of milk, added 2 eggs and mixed well.3. I added 560 ml of milk to the melted sugar, stirring constantly. I added the previous mixture, stirring. I took it to the fire, until it boiled and I turned the heat down and let it cook for about a minute, to gain consistency. I removed it from the heat and added 1 teaspoon of vanilla extract.
4. At the Thermomix, I crushed Maria biscuit and peanuts (I love Matutano’s because they have that salty flavor that contrasts with the sweetness of the pudding). I left some larger pieces to give a crunch that with the smooth texture of the butterscotch is superb!
5. I added whipped cream and voilá! 😉 Different textures… the smooth, the crunchy… the sweetness of the butterscotch with the touch of peanut salt …
