Brown sugar is obtained from sugar cane, but unlike white sugar it is not refined. Thus, there is no loss of vitamins and minerals.

Yellow sugar is partially refined because the molasses is not completely eliminated, giving it its characteristic color and moisture.

The caloric value, however, is similar in all sugars, so we must consume it in moderation.

I use brown sugar in cookies and some cakes that I prefer moist.
